An Elegant Monochromatic Thanksgiving Dinner

For a contemporary Thanksgiving menu that piques all of the senses, consider a simple Rosemary Lamb Chops recipe with Israeli couscous. Enliven your table with acorn squash, cranberry sauce and a fresh mixed greens citrus salad. 



Rosemary Lamb Chops
Ingredients
8 lamb chops
2 tsp fresh Rosemary
½ tsp salt
a pinch of pepper
2 tsp olive oil

Method

Place the olive oil in a pan on medium heat.
Combine all the seasonings with warm olive oil and rub into the chops. 
Heat a frying pan over high heat and add the lamb chops into the pan.
Cook for approximately 3 minutes on each side for medium rare.

Serve with Israeli Couscous.

Israeli Couscous
Ingredients
4 cups of water
2 cups of couscous
250 gr cherry tomatoes, halved
200g olives
1 red onion diced
bunch of fresh mint chopped 
¼ cup lemon juice 
¼ cup olive oil
salt
black pepper

Method
Toast the couscous with olive oil on medium heat for 5 minutes while stirring.
Add in the water and simmer for about 10 minutes, or until the liquid has been absorbed. 
Place the cooked couscous into a large bowl and add the cherry tomatoes, diced red onion, olives, and mint. 
Season with olive oil, lemon juice, salt and pepper.
